Very excited to share with you my Italian Soup recipe.  I hope you will enjoy it as much as we did!!

  • 8-10 Chicken strips (boneless) cut up in bite size pieces
  • 2 tablespoons of olive oil
  • small onion, cut up
  • 2 medium size carrots, cut up
  • garlic, basil, oregano
  • 2  14.5 ounce cans of diced tomatoes
  • 3 small cans of chicken broth
  • 1/2 cup of pasta, your choice
  • 2 medium zucchini, cut in chunky slices, then half the slices
  • 2 medium squash, cut in chunky slices, then half the slices

Add 2 tablespoons of olive oil to soup pot, heat on medium-high heat. Add chicken bite size pieces to oil, sprinkle with garlic and cook for 10 minutes or until done. Turning frequently. Add small onion & carrot pieces.  Cook an additional 5 minutes. Add cans of diced tomatoes and chicken broth. Add zucchini and squash. Sprinkle with basil & oregano.  Bring to a full boil, then simmer for 30 minutes. The last 10 minutes, add 1/2 cup of pasta. (I used rotini). Once done, ladle into bowl, top with shredded parmesan cheese (optional) and serve with bread sticks.

This soup is delicious. You will be sure to love it!  Enjoy!!

  1. Thanks Faith! Love your blog! And thank you for visiting my blog and liking it too! I love your recipes and I love to cook as well! Many people these days are into fast food and forget that they can cook something that is quick and much more nutritious and yummy than what they are getting at a takeout outlet don’t they? My grand-daughter is named Faith as well, so I took that as a sign…I hope you have an awesome week! Angel Hugs, Barbara
