One of my favorite side dishes…
Zucchini-Squash Stir Fry….add 2 tablespoons of olive oil to 12 inch skillet. Heat medium-high. Cut onions, zucchini, squash in chunky pieces. Add to skillet. Sprinkle with garlic, salt & pepper and ginger. Toss with wooden spoon, turning frequently. Cook for 9-10 minutes. You will love, love this. Enjoy!!

Very excited to share with you my Italian Soup recipe. I hope you will enjoy it as much as we did!!
8-10 Chicken strips (boneless) cut up in bite size pieces
- 2 tablespoons of olive oil
- small onion, cut up
- 2 medium size carrots, cut up
- garlic, basil, oregano
- 2 14.5 ounce cans of diced tomatoes
- 3 small cans of chicken broth
- 1/2 cup of pasta, your choice
- 2 medium zucchini, cut in chunky slices, then half the slices
- 2 medium squash, cut in chunky slices, then half the slices
Add 2 tablespoons of olive oil to soup pot, heat on medium-high heat. Add chicken bite size pieces to oil, sprinkle with garlic and cook for 10 minutes or until done. Turning frequently. Add small onion & carrot pieces. Cook an additional 5 minutes. Add cans of diced tomatoes and chicken broth. Add zucchini and squash. Sprinkle with basil & oregano. Bring to a full boil, then simmer for 30 minutes. The last 10 minutes, add 1/2 cup of pasta. (I used rotini). Once done, ladle into bowl, top with shredded parmesan cheese (optional) and serve with bread sticks.
